Here is a way to make some protein bars.
Oatmeal 3 cups
non fat yogurt vanilla 12oz
egg whites 3
Brown Sugar 3/4 cup
Splenda 1/2 cup
Olive Oil 2 table spoons
Vanilla 2 tsp
Whole Wheat Flour 3/4 cup
Protein 4 cups I used ON Whey chocolate
Skim milk 1/4 cup
Peanutbutter natural 2 table spoons
Salt (optional) 1/2 tsp
Cinnamon (optional) 1 tsp
In a large bowl combine sugars, yogurt, egg whites, oil, milk and vanilla; mix well. In a medium bowl combine flour, cinnamon, salt and protein powder; mix well. Add the contents of the medium bowl to the large bowl and mix well. Next add oatmeal and mix well. Pour contents into a 13x9 pan and bake in the oven on 350 for 30 minutes.
This will yeild 12 bars 4 1/4 long x 2 wide x 1 inch thick. Each bar has 302 calories, 29g protein, 34g carbs, 6.7g of fat. This breaks down to 38% protein, 45% carbs, 20% fat. I think a larger pan would be better and woud get the bars down to about 1/2 inch thick.
If you add another 3/4 cup of flour and 1 tsp of baking soda this will turn into a cake when baked. You can also opt to leave the peanut butter out to lower fat. I included it to try and reach a 40-40-20 ratio. You really cannot taste 2 table spoons. These aren't bad, a little on the dry side but with a glass of milk or a scoop or two of fat free ice cream there pretty good.
I havn't tried it yet, but I think if you add about a cup of apple sauce it will help make them moist.
