pre contest screw up

I have competed for about 15 years on and off. I have placed very well and won my class several times but since I turned 40 I seem to come in flat on contest day. Here we go - from 5 days out
Day One -2 gallons distilled water about 100 g carbs 300 g protein
Day two - same
day three - same
day four - 20oz water 200 g carb 300 g protein -
day five - 20 oz water 500 g carb 300 g protein
contest day 200 g carbs sip water thru the day
 
What did you do before? Carbs take like 36 hrs to fill you out so my thought would be to hit the carbs hard on thurs. Are you sayign you never fill out or you spill over?
 
You have more experience than i do but for me, that is significantly less than I ate going into my last one and I was WAY under full. I came in at 185 and could have been closer to 190 I'd say. The morning of the contest alone I ate more carbs than you have posted there.
 
I'd say I spilled over - just flat - I am a salt lover and I always eliminate salt the week before the show. You think this might be my screwup? Should I just keep the salt at a constant?

That could very well be it. I didn't touch sodium and didn't have that problem so much - you need it to retain water after all so that makes sense.
