Spinach- Stuffed Chicken Breasts
Serves: 6
328 cals., 12 g's fat(3 sat.) 48 g's protein,4 g's carbs.
2 T. Virgin Olive Oil
1/2 small onion, chopped
1/2 large sweet red pepper- finely chopped
1 pack. frozen( or fresh as I perfer) chopped spinach. Will need to be thawed if you buy frozen type.
1 T. Fresh Rosemary
1 t. salt( I omit salt but u can use it IF you must)
1/2 Black pepper- I use 1 T since I omit salt
1/2 C. Shredded mozzarella cheese
6 Boneless-skinless chicken breasts( about 3 lbs total)
Prepare grill. In med. -size skillet, heat 1 T. Olive oil over med-high heat. Add onion and red pepper, saute 5 minutes. Add spinach, 1 t. rosemary,1/2 t. salt and pepper, cook 3 minutes. Remove from heat and allow to cool slightly. Stir in cheese
For rub: In a small cup combine 1 T. olive oil, 2 t. rosemary,
1/4 t. black pepper.
In each breast, cut a pocket horizontally thru thicker side. Fill each breast with 3-4 T. of spinach stuffing. With 2 toothpicks, secure pocket closed. With fingers, spread rub on both sides of each breast.
Grill 10-12 minutes PER SIDE or until meat thermo, reads 170 degrees!
