I would assume squats' effects on GH levels would be greater than lunges simply because you are using both legs simultaneously, you can train much heavier with squats, and they demand more recruitment of stabilizer muscles.
Lunges are a good mass builder for quads but you can't challenge the king of free-weight exercises.
