Makes 4 servings - each svg. 33 grams protein- 3 grams carbs
2 Cups julienned chicken.
12 sliced water chestnuts rinsed and drained
3 celery stalks-sliced thin
3 minced scallions
1 red bell pepper
6 cups mixed salad greens
1/2 cup dry roasted p-nuts
1 T cilantro
In a lrage bowl, combine,chicken, water chestnuts, celery, scallions and bell pepper. Mix well.
Arrange your dish with various salad greens. Sprinkle peanutsand cilantro over the top. Spoon below Salad dressing over top
Chinese Chicken Salad Dressing:
1 T Grated Ginger root
2 minnced garlic cloves
1 T LOW - SODIUM soy sauce
2 T Lime fresh lime juice
1/4 cup sesame oil
1/2 cup pure mayo
In a blender or food process., blend all ing. until smooth. You can also place in a jar and shake the hell outta the above ingred's
too.
