Redguru's basic jambalaya

Ingredients

1 lb smoked turkey sausage
1 lb ground turkey sausage
1 lb cooked chicken breast meat
2 cloves garlic, minced
1 onion, diced
1 green pepper, diced
3 stalks celery, diced
1 cup brown rice
1 can diced tomatoes (no salt added)
3 cups chicken stock, recipe follows

Spices
1 tsp cayenne pepper
1 tsp black pepper
1 tsp sea salt
1 bay leaf
1 tsp fennel seed

For the chicken stock, throw three cups of water in a saucepan, add the chicken bones and skin from split breasts, the onion and garlic peels and the leaves from the celery stalks. Add salt and pepper to taste. Bring it to a rolling boil then simmer for an hour. Strain. Add enough water to return to 3 cups.

Brown the turkey sausages in a stock pot with the fennel seed, set aside. Add the garlic, onion, green pepper, celery, cayenne, and black pepper to the stock pot, and cook until crisp-tender. Add all the meat, the rice, chicken stock and remaining spices, bring to a boil. Stir once. Reduce heat to simmer, cover tightly and let cook 45 minutes.
