Pudding / Desert like thickening protein powder

Sorry for double posting, but I see there is almost no traffic on the muscle food board so maybe here:

Ok. I purchased this great MET-Rx protein called CarbFX. It hardly have carbs (big 46g protein serving has about 4g carbs). It's a blend of egg protein, whey isolate, calcium caseinate & glutamine, it comes out quite thick and tasty and is the only one I can really stir with a spoon (all the so called other 'instants' protein are bullshit)... But that's not the issue..

I found out today while stirring, that I a little chunk of protein was left at the bottom, I took it with a spoon and it tasted much like a pudding.. that makes me think about making a 'desert' like out of this protein powder, but I can't figure a way to 'Harden' without any carbs it so I can eat with a spoon. Strange question, but I'm always looking for creativity. anyone ?
 
I use a teaspoon of xanathan gum from a health food store. If you put a teaspoon in the blender with any kind of milkor cessian
combo you get protien pudding. I have this at night as the gum has only fiber in it and i figure that the pudding like mixture will slow down digestion. also when i have a bad sugar craving i just make it thicker and it fills me up and leaves no room for junk

Thanks Hansel, but unfortunately in my country, the only sugar free jello I have is flavored Strawberry or Apricot. And the sugar free Jellow types are either Chocolate or Vanilla and contain 60 cals per 200grams, too much... :(

Add sugar/fat free pudding (can get at store) and less water.
