Off season diet help

Here is my deal...I hate cardio...I'll do it for a training for a show but that's about it. I can diet very strict and go low carb for months so I can get out of doing as much cardio. I'm through my busy season of being on gear and killing myself in the gym. Last year I did very bad during the off season. I went from 260 in April of 03 to 211 in June of 03 for a show. By September I was a soft 245. Part of the problem was I had zero diet control. I'm looking for a book on nutrition where I can eat a balanced diet and actually have more then 40grams of carbs a day. Currently I am 245 6' and around 14% BF which is fine with me. I'd like to stay here until I start training again in September. Once again I will re-state that I hate cardio. I plan on keeping my protein high and I just want to stay around the same weight and BF. Any recommendations out there are appreciated.
 
If you want to maintain your current size, eat what you are currently eating...pretty simple. At 245lbs and using a "balanced diet", I don't see how you couldn't eat more than 40g of carbs.

If I eat more carbs it seems to turn into instant fat. I'm looking for dieting and nutrition books.
