I can definitely see your progress from your pics. Good job!
The answer will lie in your diet. I think 1000 in a day is too low but 7 weeks out, you may need to drop it down a bit from 1800. If you can, I'd post up your high days and low days menus and let us help you tweak it.

My high carb day 200grams Sunday
meals 1-3
5 oz grilled Chicken Breast
1 cup oatmeal
Meal 4 preworkout meal
Protein Shake syntha six
Meal 5 post workout meal
5oz Chicken Breast
4oz sweet potato
Medium Carb 100grams day Monday
meals stay the same except the servings of carbs are cut in half.
Low Carb days 50gms or lower Tuesday-Saturday
1.1/2 cup oatmeal
5oz chicken breast
Meals 2-3
Serving of spinach
5oz chicken breast
Meal 4
Protein shake
Meal 5
5oz chicken and spinach
No healthy fats? It's my understanding that on low carb days, especially, you're to increase healthy fats. Of course, if you're cooking all of your chicken in olive oil, there could be too much.
How do you handle all that oatmeal?!?! Lol! I couldn't.
and I don't see any veggies except the spinach.
And how about water-- are you drinking enough to flush everything?
And maybe replace meal 1's chicken with an egg and a few egg whites.

intermittent fasting has been working great for my wife.. but depending on your exertion it might not work well for you.. don't want you to have low blood sugar crash.. just close to it..
