Im currently 24 yrs old 5'11 187 with pudge through out my midsection. I found pictures of a model who is 5'11 165. With a body that is approximate to the results that I'm eventually looking to achieve

I just started the ANPD
I have pretty decent arms and shoulders, I need work on my chest, traps, and core. I wanna know if its better to cut down quickly and build up slowly, or cut down slowly. I'm also seeking advice about training.
Ill post pictures of myself when I was "in shape" at 154 and 190 respectively.
Here is a picture from my JR and SR year in highschool. 154 lbs and 190 lbs respectively. I want to fall somewhere in between, and be as lean as possible.
