i am going to give you a whole bunch
though not encyclopedic
i know lots of food and some times forget a few
if i forgot it i probably don't like it

as for cooking
most green veggies can be eaten raw or cooked
best form of cooking veggies is to lightly steam or stirfry them..minimal nutrient loss
boiling green veggies just leeches out the b vitamins
harder green veggies can be braised...sauteed with a bit of broth to soften
don't forget soups lads and lasses green veggies added at the end to a pot of soup stock makes a great meal...try dashi(japanese broth) with alittle miso and sesame oil

for seasonings i always use lots of garlic sesame oil and tamari but that is me
cook for yourself remember you have to eat it
most cooked veggies are best done simply but one thing to try is adding a tiny pinch of nutmeg esp to broccoli or spinach sweetens it up
as for your gastro distress try adding alittle lemon at the end might help

wrapping em in foil for bbq-ing is great
try it with a bit of tamari, garlic, ginger and sesame oil

for those that know me i am a chef and food is my profession and passion

i am also descendent from chinese and jamaicans so my food and what i eat is generally skewed that way

as i tell people
recipes and taste is subjective
what i may like you may not

but here ya go

4 ripe large roma tomatoes, diced
1 small red onion, peeled and diced
2 tablespoon extra virgin olive oil
1 large pinch of salt
1 clove garlic mashed and chopped
several grind black pepper
1 small jalapeno or chili of choice (leave seeds out if you want it mild keep em for heat)
1 tablespoon cilanto roughly chopped
1/8 tsp ground cumin
juice one lime or more up to your taste
dash worchestershire sauce


can throw in whatever else you like
some throw in black beans or corn
some like it hotter and move up to thai peppers or scotch bonnets
one thing i love to do is char the tomatoes and onions on the bbq before chopping

and if you like it fine throw everything into your food processor and wiz
i love chunky food i love the texture and being able to see my food but some don't

by the way i am catching up here
not been on line much with a busy week at work
but
i notice a few people mentioned pickles and sauerkraut
while i do eat these once in a while or i add as flavouring agents i am not fond of because of their sodium levels

but you can make your own pickles by buying the smaller pickling cukes (usually found in the spring) and cutting them up and keeping them in vinegar with crushed garlic and some peppercorns and dill seeds in the refrig
after two days good to go keeps for a month in refrig
as for sauerkraut may i suggest kimchee
less sodium but can be rather hot
 
for something alittle different kids
try grilling your romaine briefly before chopping it up for your caeser
pretty tasty
and can used warm bacon dressing instead of caeser with it
good with grilled chicken or shrimp

Hot Diggity Dawg!!! You're one vegetable eating mofo! Great input!

When I grill veggies, I use vegetable pans and olive oil. Yum Yum! It doesn't hurt to have a 100,000btu BBQ either.

Duck is one of my favorite foods! *sigh* I get it about once a month.

We're actually having a nice prime rib and rabbit marinated in a red wine sauce.

Don't look at me that way! How else are we gonna explain to the kiddlings why they didn't get an Easter basket??? ;)
 
I eat most of my greens raw. Olive oil and Balsamic vinegar rule!!!!

If I cook my greens it's
-spinach in an ommelete
-bell peppers ina an ommelete
-sauteed mushrooms
-grilled or steamed asparagus

hey bud if this is a problem try seasoning it with ginger or drinking ginger tea or real ginger beer whenever you have cruciferous veggies

dr. weil (8 steps to optimum health) suggest ginger taken on a daily basis to aid digestion probs
i personally love the stuff and it goes in mass amounts into my food
some people don't care for it so i suggest capsules from the health food stores or candied ginger (soft chunky ones are best)
in the orient and now many parts of europe ginger is used for stomach aches and motion sickness
check it out you may find a new friend

SSS -- I have to admit that broccoli did the same thing to me once I first started eating it regularly. But it eventually faded (the reaction). I guess my system eventually got used to it!

I'm a big fan of ginger and have it scattered throughout my diet and even drink ginger tea. Not sure how that fixes the gas problems though. I even keep ginger ale around the house for just in case.

My favorite way to eat mushrooms is with those large shitake mushrooms. Put some olive oil on 'em, add cheese and toppings and tada! A mushroom pizza!

Marinate portobello mushrooms with Italian dressing -- just pour it on the gill side & let sit for about 20 mins, then grill. Awesome!!!!

(tell your wife to suck it up! LOL :p )

seems high sulfer foods would if broc does
i have the flatuence probs only with potatoes
and goes way when i take a sup
not that i eat potatoes anymore

i love shiitake
i can eat pounds at one sitting
fav way is just stirfried with ginger garlic and soy
go figure
another way
learned this from an old japanese lady
is to roast them sitting on pine needles
(mushrooms grow in the forest mainly pine and oak forest)

i should try roasting them over oak coals since shiitakes are found on decaying oak trees

Eggs do if I eat too many of them...

I've tried papaya enzymes and beano and some other thing I don't recall the name of. I figure if my body doesn't like them, why keep feeding them to my body. So I adjust my diet around those kinds of things.

Another portobello mushroom recipe: bake portobellos till tender -- knife goes thru easy....top with spaghetti sauce, spinach & fontina cheese then bake or broil till cheese melts. Now that's a pizza!!

Oh you could add meat if you wish I guess....

I leave off the sauce, too many carbs, and add the spinache meat and goat cheese!

goat cheese = fat

i didn't say antything about the meat I just thought you were leaving off the sauce for carbs and I can't see it really being that many carbs....

sauce = flavor too!!
 
you can handle alittle carb sss
if not then think of the lycopene vitC and acidifying qualities of the tomato sauce
if all else how about a big ass slice of fresh tomato?

please realize i grew up in the industry
my dad dragged my ass to his restaurant at age 9
so i have been in the biz 32 years

and my mom was a great cook in her own right
i learned flavours from her and she could make anything taste good
and while we lived on jamaica we had a great maid that taught me jamaican food

i get bored with the same ol very easily so i experiment ALOT
i try it before i subjugate the peeps at the restaurant with my creations
 
Yesterday was a veritible feast of greens to go along with the prime rib. Started with an Itailan anti-pasto salad, the added green beans sauted in bacon grease, broccoli with a spicy cheese sauce and asparagus grilled. YUM YUM. Ok so there was corn too, but who the hell can digest that stuff?

Today for lunch I made a veggie mix of green & yellow baby summer squashes, multi colored bell pepper, chopped tomato & fresh spinach....quite yummy with my chicken & rice....

today to my usual green mess I added tofu, chick peas and marinated jalapenos = :p

fucking A everyone in the cafeteria thinks I'm weird ejoying my salad that much - ugly fat biatches hate when people flagrantly stare like that :o

I like spring mix -- comes in a bag labelled as such. I think it's a mix of frisee, arugula, and 2 other lettuces (dark) I can't think of. I also like a combo of romaine & spinach.

most green vegetables can be grown everywhere these days esp with hydroponics and hot houses

the green vegetable with most nutrients is actually parsely
fresh parsely that is not the dried stuff
try tabouleh...mideastern dish with bulghur (Cracked wheat), lots of tomatoes, parsely, mint, red onions, green onions and lemon i like to add cucumbers to this salad

next in line of nutrients are the sea vegetables
very high in minerals and protiens (incomplete)

next beneficial types are the mushrooms
shiitakes (when dried are called chinese black mushrooms) are being researched for aids, cancer and alszheimer's
maitakes for aids and cancer
cordyceps revitalize the entire chi system

all foods can be beneficial but also harmful that is why it is suggested you eat a wide variety of them
i suggest esp with veggies and fruits to eat what is seasonal for your area
(NOT peaches found in december grown in peru when you live in the northern hemisphere)

i believe if you eat seasonally nature is giving you what you need to deal with that season

why do you think there are so many oranges and mandarins around right before winter
and so many melons during the summer
 
when visiting our relatives (oriental descent) I had a salad with cactus plants, prickly pears and some other stuff that I never seen/heard in my life before - but the taste :p

i believe western diet has funneled itself into the basics
some of us try new things and rave about it but are relegated to eating it only in restaurants or friends homes
but i think if you find a flavour you like go buy it
you may not know how to use it but experiment with it anyway
and mix and match

arugula is not oriental but tastes damn fine with toasted sesame oil on it

I'm half lebanese.. my grandmother made the best tabouleh ever :) can't find anything like it in restaurants

I know this isn't green, but the outside can be green-ish and grilling made me think of it -- grilled pineapple!! I know, I know about fructose, but a grilled pineapple salsa with chicken is da bomb!!

I've had that before where there was just a touch of cayene pepper in the sauce and the taste was awesome!

don't forget peach salsa
lol i make salsa out of alot of fruits
and most times i use jalapenos
but with some i go as far as habaneros
goes well with mango and/or apricots

I posted my recipe for mango salsa on the food board -- that stuff is AWESOME!!!
 
here ya go bud

2 large peachs (au naturel or peeled), medium dice
1/2 red onion, diced
1 small red pepper diced
2 tablespoon cilantro, chopped
1 tablespoon basil, chopped
1 tsp mint, chopped
1 small jalapeno, seeded and diced
1/2 cup sweet thai chili sauce for chicken
juice 1 lime


mix let sit at least 30 minutes and go for it

can substitute a small habanero for the jalapeno if you want 3alarm heat
 
spinach
peas

broccoli (but only from a chinese restaurant in white sauce)
zuccini
bok choy
all bell peppers
hot italian peppers
broccoli rabe (yum yum)


more will come to me.

generally speaking there is no veggie I hate

one thing i love to do is "blanch" the veggies (works best with asparagus, broccoli, green beans, brussel spourts) then "shocking" them

blanching in dropping them in boiling salted water for a few minutes til the colour changes to a bright dark green and removing them before they turn greyish

shocking is then dropping them in ice water to stop the cooking

doing this insures the veggies are still al dente and not overcooked

it is a restaurant technique but insures spectacular results

any way you can do this a few days in advance if need me

i do alot then add them to my salads
but i digress

what i do is take some whole butter and put it over a medium heat
and let the butter brown while gently shaking the pan
then i add my favourite nuts, chopped
works great with almonds, hazelnuts, macadamias, walnuts, sunflower seeds, or sesame seeds

then toss in the veggies to reheat them add alittle sea salt and black pepper
can add grated lemon zest if you wish
or chili flakes

can also use toasted sesame oil
organic coconut oil is good too

can add chopped fresh herbs
thyme, tarragon, basil, lemon verbena, and curry leaf works well here
 
another good thing is saute some fresh chopped garlic in some good olive oil
add fresh chopped tomatoes (great during the summer)
gently warm through
add veggies
and lots of fresh basil and salt and pepper

green beans, zucchini and broccoli go well with this method

can substitute tarragon for basil and use for asparagus

well here is what i do:
2 avocados, chopped
1/2 red onion, chopped
1 jalapeno seeded and chopped fine
juice 2 limes
1 tablespoon cilantrom chopped
1 roma tomato chopped
2 tablespoon olive oil or mayo (your choice)
pinch cumin
and as much hot sauce as you want

this is the recipe i am currently using
the one i gave to optimus varied slightly

i wish peeps would get over the idea that fats are good for you
as we know olive oil and fish oils are very beneficial
peanut oil is too to a lesser degree
but oils like avocado oil is also very good for your system
not something i would eat every meal or even daily but i do enjoy it at least 3 times a week


and peeps saturated fat is also beneficial to a degree
it is noted that saturated fats are need for T production
