I haven't seen any posts on buffalo meat, so here's one -
I'd read about it being low fat and high protein, but had never tried it. My wife purchased a package of it from an organic food store. There were 2 6 oz steaks in the package. Here's the stats on one 6 oz. steak -
180 calories - 20 from fat
total fat - 2.5 g
saturated fat - 0.5 g
cholesterol - 65 mg
sodium - 75 mg
total carbs - 0 g
dietary fiber - 0 g
sugar - 0 g
Protein - 40 g (that's right, 40 grams of protein)
Low fat and high protein and they tasted great. Buffalo can be subbed for any meat. It cooks rather quickly and is best eaten rare to medium, otherwise it dries out too much. I bbq'd it with some cajun spice and minced garlic and they were cooked to med. rare. Excellent flavor. The texture was slightly different than beef and the flavor was only slightly different than beef. With some potatos, steamed asparagus and fruit, this was a killer meal. The 2 pack cost $8, so it's a bit expensive, but I thought it was well worth it.
