:chomp: hey, I am planning on cooking sweet potatoes not ala can...what do I do? yes, I have plenty of cook books but I would like to benefit from the wisdom of the women (or men ) at ef.

I love sweet potatoes too..



Sweet Potato Casserole

5 medium size sweet potatoes
2 eggs
1/4 cup evaporated milk
1 tsp. vanilla
3/4 cup sugar
1/2 tsp.salt
2 tsp. butter or margerine
Topping -


1 T. butter
3/4 cup light brown sugar
1/2 cup flour
1 cup finely chopped pecans or walnuts
Preparation -
Peel, cut up & cook sweet potatoes until soft. Combine potatoes, eggs, milk, vanilla, sugar, salt & butter in a large bowl & mix thoroughly, or, put ingredients in a food processor and blend well. Pour mixture into a buttered baking dish. Bake at 350º for 20 minutes. Remove from oven. Set oven to 375º.

For topping - In a mixing bowl, cut butter into sugar and flour. Stir in nuts. Sprinkle topping over sweet potato mixture in pan. Return to oven & bake 6 to 8 more minutes.

To double this recipe, add 5 to 10 minutes baking time for the first baking time.
No additional time is needed for the topping.

I slice them then bake them at 425 degrees F like fries...

I microwave them, then bake in oven (375) till the skin is a little crisp. I also take this part further & make twice-baked sweet 'taters -- cut open the tater take out the pulp & mix with spices, hot sauce, olive oil, etc, restuff & rebake.....
 
Wash em, poke a few holes in them, wrap them in tin foil & throw in the oven at 350 or 400 (sorry don't remember right now) degrees or on the grill for 45 min. I tend to eat my stuff extremely plain so I guess you can't get much more simple than this. I sometimes throw some Splenda on them.
 
thanks everyone! I ended up just boiling them and then mashing them with some brown sugar (did you know they have organic brn sug?) topped with marshmelow for kiara :) (not organic) I have decided that I LOVE non-canned yams so will try all your recipes out in the near future. Especialy that casarole Pamela...made my mouth water just reading it!
