Sweet potatoes - how do you like them?

I haven't braved the protein powder add but I had my first baked sweet potato (ok, I microwaved it - I have a microwave for the first time in 4 years!) with absolutely nothing on it and it was great. My favorite still though is sliced like fries and brushed with EVOO. For some reason I just can't fathom putting cinnamon on a vegetable. Just can't do it.

Thanks for all the ideas! I like the veggie mix in the oven - I'll give that whirl.

Onebreath was talking to a bodybuilder competitor at our gym and he said his wife would bake sweet potato cupcakes. Wish I had a recipe. Mmmmm
 
Iron wings, I have been trying to get the courage up to microwave a sweet potatoe myself. Think Ill give it a try...with some Brocolli

I can't deny it. I went all out lazy and bought a sweet potato wrapped in plastic that you just throw in the microwave :Chef: I'm such a chef.

Let me know how it turns out - how long do you nuke the sucker?
 
ive never tried sweet potatoes but am thinking of making some spicy wedges in the oven out of them and chuck some spinach and a steak on the side ummm cant wait.

OMG - just tried it. 6 minutes in the microwave, simply delightful! Really soft and needs no butter/ dressing. Its gonna be a staple.

Tonight Im cooking 15 at once in the oven in olive oil - gonna bag em into 15 portions, each with a large chicken breast, a cup of brocolli, and some low sodium soy sauce and then freeze em

Ok, got it - 6 minutes in the nuker. Portioning out is a great idea! Yeah, the day I had it there was no need for anything on it - it was scrumptious just like it was!
 
I get organic yams. Infinitely better then sweet potato. It tastes like dessert. I eat them plain baked and as sweet potato muffins. Make them with oats, rather then flour.

Sweet potato Muffins

This is also a great idea when you are traveling or on the go.

In a bowl mix

8 oz sweet potato I first bake them in the oven the mash them into like mash potatoes.
2 cups dry oat meal
1 cup egg whites
1 whole egg
1 tbsp of vanilla
Cinnamon
1/4 cup Stevia (or to taste)

Get a muffin pan with 12 and spray with pam
Cook at 350 for 30 minutes


Comes out to 18 carbs per muffin.

Also...

Sweet potato healthy fryes.

1)Take a 4 oz potato ( or whatever oz. you diet calls for) and feed it through a Cuisinart mixer, with the slicing attachment.

* you can also just slice potatoes super thin if you don't have this machine

2) Line a cookie sheet with foil.

3) lay out the thin slices on the pan, sprinkle with salt and bake at 400 for 15-17 minutes. Decrease heat to 300 and cook for an additional 5 minutes. Turn oven off, and leave door slightly open. Let cool in oven.

They come out crispy and soooo yummy!

would also work for yams for yam lovers as myself..I'd sprinkle them with cinammon instead of salt but cook them the same..
