My diet or lack there of

Alright, I'm in a huge transition phase of my life, changing job, location, lifestyle, etc, you name it and it's probably changing right now. Due to the chaos in my life I'm looking to come up with a good breakfast, maybe a couple different lunches and a couple different dinners so I can take the thought out of eating. During these times I find myself more and more inclined to fast food and nutrition has gone down hill. I still find time in my days to work out 3 times a week, nothing major but like a 3x5 workout. I'm wanting to gain some weight, and figure about a 3000 cal diet would do it. I know I should just do the homework and figure this out on my own, but time is something I don't have much of. Any help would be greatly appreciated.

You should take the time. If you can't find the time to sort out your diet it can't be very important to you.
 
If you take an hour out of your night time to plan and cook your meals for the next day, there's very little thought put into it at all. Or you could simply hire a personal trainer to set everything up for you and then you can just cook quickly the night before, buy a beverage cooler, and take your food along with you. Really, if you want it you can make it happen.

You may not need 3000 cal's at your weight if weights is your only exercise.

As for diet, I am really lazy but it doesn't take long to cook healthy food - microwaving veggies, steaming frozen veggies, grilling meat under george foreman, opening tins of tuna or salmon all takes less than 10 minutes. You can be super efficient and prepare all meals at once in the morning.

If your really lazy for calories, just make milkshakes by blending whey + skim milk + oats + flaxseeds + fruit. Still healthy
