I have finally burned out on tuna and brown rice.

I know, its more expensive for bigger guys to eat, that's for sure. I do understand. The beef made this way stays moist because of the tomatoes and water to cook the rice. I promise. :)

So, its just beef, rice and veggies?

Yes, :) - but its all those spices that make it good, LOL.

I even throw it in some taco shells with those mozzarella cheese crumbles and some salsa & sour cream. If not in the mood for the mess of eating tacos, the 'taco in a bowl' works too.

So, then for cutting you just get rid of the rice?

You could, yes. But some people respond better to daily carbs rather than twice weekly carb-ups. All dependent on you as a person and what your body responds to. When I was competing, I never ate starch carbs at the last meal. Generally it was meat + non-fibrous veg. My carbs were generally eaten at 1st meal, lunch mean and post-workout shake.
