French Presses

They are done with both hands. You can do them with one hand, but then its not a french press. Both hands allows you to use alot of weight (more then double what one arm could do).

Its a fun exercise, but the mechanics can get difficult once you start using 100+ lb dumbells.
 
Personally I get the most pump and burn in my triceps out of doing one-arm dumbell style. Using 2 heavy dumbells or heavy EZ bar I tend to use kind of a cheating pullover motion, also my inner triceps do not have to stabillize as much.

However I think you should do them BOTH bar and dumbell. A nice twist with the bar is to extend the set immediately after failure with close grip benchpresses (using the same weight) until you cant lift the bar from your chest.

After that 2-3 sets of lying one arm dumbell extensions and your arms should be full
