I made these last night. They were awesome.
2 large chicken breasts - grilled & shredded
2 cups napa cabbage, thinly sliced
1 small red onion, thinly sliced
1 medium carrot, cut into thin strips
2 tablespoons balsamic vinegar
1/4-1/3 cup olive oil
2 chipotle chilis, seeded and finely chopped **
you can buy chipotle chilis in adope sauce at most grocery stores in the ethnic foods section.
whisk together the vinegar, olive oil and chipotle chilis. add chicken, cabbage, carrots and onions - mix well and let sit for 15 minutes. load up your tortilla and enjoy.
i made these tacos with la torilla factory lo-carb, whole wheat tortillas. no salsa, sour cream, or cheese necessary.
if bulking, add some diced avocado - yummmm.
