Wondering; I love cheese but its always bad because of the high fat content, is there something I can do to get rid of the fat and just get the protein out of say a block of cheese if not whats the best cheese for low fat content, your probably gonna say buy low fat cottage.. idk
 
Low fat riccotta cheese.

Riccotta is high in whey where cottage cheese is high in casein.

I'm sure if you look around your local store you can find some good low fat cheese that you wil enjoy.
Even if you dont go with the low fat you can eat cheese,,,just dont over due it.
 
I've personally never really found a low fat cheese that was very good.

If you wanna try something a bit different with cheese:
Grate some of your favorite cheese (I like old cheddar) and spread a thin layer over a plate. Microwave it on high power until it sizzles and turns crispy. Blot off all the oil with paper towel, and you have a nice crispy lower fat cheese snack.
This is of course not going to be the same as melted cheese on your favorite food, but I used to make this on ckd, and it taste surprisingly good. Almost like cheezies in a way.
Its also fun to experiment with different cheeses...mozzarealla works well, havarti, edam, gouda all good...though like I said cheddar is my favourite.
PS Don't try it with feta cheese, the smell will stay in your microwave forever, and you'll need to buy a new one.
 
Low fat ricotta and mozzerella actually melt better than whole milk. But NO FAT sucks. Don;t bother.

Cottage cheese is great , if you like it. (I don;t).

I love Alpine Lace reduced fat swiss. I can have a sandwich of just that with mustard. 8 grams of protein and 4 grams of fat per slice.
 
I Don't mind fatfree cottage cheese... I just grab a spoon and scoop that shit out... I used to HATE The taste... would almost vomit.. But now got used to it , whereas I still don't like it... but can handle it. IT's really worth it.
