I've personally never really found a low fat cheese that was very good.
If you wanna try something a bit different with cheese:
Grate some of your favorite cheese (I like old cheddar) and spread a thin layer over a plate. Microwave it on high power until it sizzles and turns crispy. Blot off all the oil with paper towel, and you have a nice crispy lower fat cheese snack.
This is of course not going to be the same as melted cheese on your favorite food, but I used to make this on ckd, and it taste surprisingly good. Almost like cheezies in a way.
Its also fun to experiment with different cheeses...mozzarealla works well, havarti, edam, gouda all good...though like I said cheddar is my favourite.
PS Don't try it with feta cheese, the smell will stay in your microwave forever, and you'll need to buy a new one.
