canned chicken breast actual serving size?

I did some measuring today with Great Value canned chicken breast. The can has 5 oz on it. I weighed the can, sealed, and got a measurement of 6.3 oz. The serving size on the label is 2 oz. and lists as 2.5 servings, which would equal 5 oz. I measured just the meat and got a measurement of 3.1 ounces. What am I missing here?

I wonder if the weight includes the juice? Creative math which equals rip off?!? I'd be checking the sodium content too.. Probably pretty high.

Does the heat in the canning process reduce the volume of the meat? Maybe the 5 oz weight is prior to the canning process. That is odd.
