Why do nutritionists say to stay away from sugar and starches

there is no flaw in both of your arguments, he is simply misunderstanding your definition of "break down"

Did I state that you were? I merely addressed what I feel is incorrect, your statement that processed carbs "break down" slower. I understand this phrase to mean digest, which would be untrue, for processing increases the surface area of the carbohydrate polymers.

Tell me why mr chemist? Aside from GI are there any dietary (im not concerned about health reasons right now im 24) reasons to avoid white and/or refined foods?

My concerns would be over the GI and the GL(Glycemic Load) in terms of them wrecking blood sugar levels.

Remember:

Its IMPOSSIBLE to burn bodyfat when insulin levels are elevated(dinitro excluded)

True, but some refined foods are only 'medium GI' on the GI scale. Plus if you eat them with fish oil, fiber and/or protein you can bring the GI down even more. I read a report once that people fed a medium GI breakfast with fiber had the same insulin responses as people who ate a low GI breakfast. So yeah, GI is a factor but it is variable based on what you combine it with.

Also, a person can take drugs like chromium, not to mention a variety of type II diabetes drugs if they want stable insulin levels.

I've never heard that. I can understand logically why that would be the case, but its not like insulin will ever be elevated 24/7 in anyone. Plus a drug like ALA might take some pressure off by redirecting some of the nutrients.

You can eat as many vegetables as you want with lean meats and not get fat (and no potatoes don't count).

Simply and easy and almost certainly true.

And yes while fiber is a large component, so are other things like water content all cumulating in a very very low caloric density.

Its damn hard to get many calories even if you ate 4 lbs of green beans or lettuce. You might be able to argue that some of the starchier vegetables are too starchy yada yada, but with a basket full of various vegetables, and meats, lay people will be hard pressed to feel hungry, not get enough fiber, not have important micro nutrients, etc. etc. and as such unlimmitted vegetables atleast works as a good rule of thumb.

Issues can of course come up though if your vege's are swimming in ranch dressing.
