Why do nutritionists say to stay away from sugar and starches

Exactly... anything processed is a no no... unless it is post workout... then simple carbs like Dextrose and Maltodextrin are perfect.
 
What is wrong with processed carbs? Is it just the GI (which sometimes are higher, sometimes lower) or are there other reasons?

like high fructose corn syrup for instance
 
when something is processed it takes longer to break down, thus more likely to store as fat. I don't think many nutritionist would tell you to stay away from sugar and starches. CHO's break down to sugar in the system to get transported around. Healthy eating would entail a wide variety of foods. 5 different fruits, 5 different veggies 50% CHO, 30% p and 20% fat. This was the recommendation of the nutritionist I heard speak last month. But everyone has differing opinons. What would the goal be of the person staying away from starches and sugar?

maltodextrim = complex
dextrose = simple

both have high GI

I think it's more about fillers and binders that are also in some of the healthy processed carbs.

Technically Malto is complex... but I consider it a simple carb due to the GI. If it really was a low GI complex carb I would eat a bowl of Malto instead of Brown Rice.

yes, they have to put a whole bunch of other crap into processed carbs so they will keep "fresh" in a box, and also so that they will have the proper color and smell, it is a multi-billion dollar business to make food that is completely processed and void of nutrition SMELL good. and our sense of taste is mostly controlled by scent.
