Why do competors carb up with yams?

Just curious why competitors carb up only on yams pre-contest, I know they use differnt carb sources but many use only yams.

Is it because of the GI or any other reason?
 
Yams have a very low GI and slow even release. I suppose that would help to allow more of the glucose to be stored in the muscle bellies.

I LOVE YAMS...

Here is my favorite recipe:

10 oz yam
Microwave for 12 minutes. Peel the skin and place in bowl, add 2 packets of splenda, teaspoon of cinnamon and some low fat milk.

Whip into a frenzy until it looks like pudding.

Tastes like pumpkin pie...

you should carb up on the same carbs that you diet on so its not a shock to your body... your system is used to those carbs therefore they will be more easily digested...i got this info from a post by tom prince over on Chad Nicholls board.
