I can barely down a can of tuna and salsa, but I'm working on it. In the mean time, enjoy my low-fat, high-protein, good-carb Turkey Chili. Makes 5 servings, simple to reheat, and very delicious:
1 serving: 341 calories, 10g fat (2g sat), 32g carb, 37g protein
Ingredients:
1.5 lb lean ground turkey
1 onion
1 red/yellow bell pepper
3 ribs celery
3 cloves garlic
2-4 jabaneros
1 can red kidney beans
2 big cans whole tomatoes
3 tbsp tomato paste
Seasoning (to taste):
1-2 tbsp mexican chili powder
1 tbsp cayenne pepper
1 tbsp paprika
1 tbsp oregano
2 tsp cumin
Fully cook turkey in 1 tsp olive oil or no-fat spray. Remove from pan. Saute onion, pepper, celery until translucent, adding garlic last few minutes. Add in everything to a stock pot, crushing up the tomatoes as you go. Bring to light boil then reduce heat to simmer for 2+ hours, stirring occassionally.
You can add in water or chicken broth if it gets too thick during cooking. Remove half the tomatoes if you want it lower carb, but for the amount of salsa I have to take with a can of tuna, this isn't much different.
Makes 5 servings for me, store in fridge, or freeze. Add 1 tbsp of light sour cream (1g fat) and some scallions on top.
