So, I finally got around to making these, and as expected: YUM! Just make the usual mix with egg whites, cottage cheese, oatmeal, cinnamon, sweetener, then add some steamed pumpkin, maybe a chunk of tofu, blend, and fry like pancakes.
I think I used 10 egg whites, 150g cottage cheese, 80g or so oatmeal, maybe 100g tofu (optional) and 100-150g steamed pumpkin (no skin - but I suppose you could put it in).
Try and enjoy!
Bulking food of the gods, and just eat less for dieting 
Next time I'm going to throw in some walnuts at the end, I think.
