Oats and Sweet Potatoes

Hi guys.

I'd just like to know how you prepare your oats and sweet potatoes... since until recently its not the sort of thing I normally eat! :)

Oats: cook with water & season with: splenda, cinnamon, nutmeg & maybe a dash of milk for a "creamy" consistency; or made with milk + raisins; or made with water, apples, walnuts & raisins; or made into pancakes: blend with 1 egg yolk, 4 whites, 1/3 cup oats dry, cinnamon, splenda & nutmeg -- cook in a pan like pancakes.

Sweet potatoes: Grilled, baked, "fried" or baked in fry shape in olive oil, mashed
 
Recently I roasted my sweet potatoes by cutting them into cubes, in a bowl tossing them with a bit of olive oil, and a generous amount of Mrs. Dash, then in a casserole dish roasting them at 400 degrees for 40-60 minutes.

Felt like I was cheating...

You can do the same by cutting them into fries and then baking them just as you would regular fries....sweet potato fries...mmmmm!

Mashed is good. Light coat of olive oil on a whole sweet potato, in the oven for an hour like baked potatos would be done. Then they peel easy. Mash with cinnamon, nutmeg, cloves (whatever you like), bit of 1% milk...and its gooooooood!

What is Splenda?

I have my oats uncooked mixed with muesli and milk and honey.

Sweetpotatoes are best when shaped like fries IMO, but roasted not fried.
 
Boil or microwave your sweet potatoes, peel them when they are cooked. Mash them up with some skim Milk, a bit of honey, and cinnamon. Damn they are good! I would take this over oats any day of the week.

Mrs. Dash is a brand of spice mix that is sold in the spice section of the grocery store. It's all salt-free & has different flavors -- spicy, table blend, tomato garlic, etc

Splenda is a sugar substitute that is made from sugar by chemically changing the sugar to be 0 cals, but with still the taste of sugar. Plus, you are able to cook with it without it tasting funny like Equal & Sweet N Low....
 
Here's a good sweet potato recipe:

Twice baked sweet 'taters

Bake a sweet potato "in the jacket" (skin) till baked (soft).....cut in half....scoop out the insides & place in a bowl.....continue baking the skin till crisp, if desired........mix the inside with olive oil, various spices (mrs Dash, salt, pepper, hot sauce, etc), garlic, etc.....place the inside back into the outside, bake till crisp on top........ AWESOME!!

(oven temps are about 375 all times, you may want to use broil just to crisp the top)
 
Oatmeal ( I don't eat it anymore but this was my fav ) half cup in a bowl, top with water slightly above the oats - nuke for a minute, take out add some raisins or sliced banana and nuke for another 60-90 sec.

Sweet potato/Yams - nuke until soft, slice in half long ways and soon out the flesh, add a drizzle of maple syrup and whip smooth with a hand mixer. (cutting? - take out the maple is you're going really strict.
