Good luck MOW-- why not invite her on the boards for some support & Q&A? The diabetes thing complicates it a little bit, but also, like Treil said, just begs the question of how to eat clean. Especially with the sensitivities that she has, just eating the right things, not even in a focused "fat loss" diet context will probably do wonders for her in general.
BTW - I recommended the BODY FOR LIFE book because it really has a great overall intro to fitness & nutrition w/o burying you in a lecture-type discussion and provides really good outlines for diet & training. Just a little bit of the basic knowledge can go a long way to helping her understand what's going on instead of getting lost in the general media crap about "low carb", "low fat" and all the other garbage about "diet" that really just markets shitty products and continues to promote flab.
