Classy Skank
Makes 4 servings - Each serving has 51 grams protein and 3 grams Carbs.
This is YUMMY stuff:
4-6 OZ. Fish steaks- swordfish-halibut,seabass,salmon.
1 red bell pepper- ROASTED!
1/4 cup Virgin Olive Oil
2 T. minced parsley
1 T. chopped, fresh oregano or 2 t dried oregano
grated rind of 1 lemon
3 minced garlic cloves
1 T. Dijon mustard
Finely ground pepper to taste
1 cup cumbled FETA cheese
Preheat oven to 425 degrees.
Rinse fish under cold water and pat dry with paper towels.
Combine all ingredients in a bowl ( EXCEPT FETA CHEESE AND FISH)
Pour above marinade over fish and marinate for 30 minutes, turning several times.
Arrange fish steaks in a baking dish along with the marinade. Bake approx. 15 minutes or until fish is tender and flakes off easily with a fork. Sprinkle with feta cheese, during last 5 minutes of cooking!
