I have added a lot of mass to my hamstrings in the past six months by prioritizing them over quads. A lot of heavy stiff legged deadlifts, and seated hamstring curls. Very controlled movements, with a real focus on muscle hypertrophy

Movements I can also swear by. One exercise I would like to add though is GHR. That deep stretch you get in those is insane.
