Asian Egg Scramble

Makes 2 servings: 40 grams of protein Trace of carbs

4 eggs
2 T. Heavy Cream
Fresh Pepper to taste
2 T. pure-pressed peanut oil
2 T. minced scallions
2 T. Fresh cilantro
1 T. Ginger-minced
1/4 cup thinley sliced celery stalks
1 cup brown mushrooms
1 cup med. raw shrimp
2 T. LOW SODIUM Soy Sauce

In a large bowl , using a fork, whisk eggs, cream and black pepper. Set aside.

In a 10-inch skillet, heat oil over med. heat. When oil is hot add, scallions, cilatnro,ginger,celery,mushrooms and shrimp. Saute til shrimp turns pink - about 5 minutes. Drain ex cess liquid from pan. Add soy sauce and mix well. Add eggs to mixture and gently stir with spoon until cooked to your liking.
