if you are concerned about sodium there are some european packed ones that are low sodium
or you could soak them in a bit of milk and that will take most of the salt out
i like them for the seasalt they contain
i just don't add salt to the recipes i make
same for SE asian fish sauce which is made from fermented anchovies
very similiar to a seasoning that serviced the roman armies for all those centuries
