African Peanut Soup

this soup tastes so good. my girlfriend is west african and she makes it for me all the time. it is made with chicken or goat meat, onion, tomato, ginger, pepper, and peanut butter (i think those are all the ingredients). i am telling you it tastes amazing. you could just eat the soup or we eat it with something called fufu (not that great for you it's made from potatoes) or rice balls.
if anyone is interested in the recipe let me know. it is late and i don't feel like typing it, if no one wants it.

Found this off a website:

2 cups chopped onions
1 Tblsp oil
1/2 tsp cayenne or other ground dried chilies (or to taste)
1 tsp grated peeled fresh ginger root
1 cup chopped carrots
2 cups chopped sweet potatoes
4 cups vegetable stock or water
2 cups tomato juice (Or V8)
1 cup smooth peanut butter
1 tablespoon sugar (optional)
1 cup chopped scallions or chives

Saute the onions in the oil until just translucent. Stir in the cayenne and fresh ginger. Add the carrots and saute a couple more minutes. Mix in the potatoes and stock or water, bring the soup to a boil, and then simmer for about 15 minutes, until the vegetables are tender.

In a blender or food processor (or with one of those cool hand-held soupifyer beater stick things), puree the vegetables with the cooking liquid and the tomato juice. Return the puree to a soup pot. Stir in the peanut butter until smooth. Taste the soup. Its sweetness will depend on the sweetness of the carrots and sweet potatoes. If its not there naturally, add just a little sugar to enhance the other flavors.
Reheat the soup gently, using a heat diffuser if needed to prevent scorching. Add more water, stock or tomato juice for a thinner soup. Serve topped with plenty of chopped scallions or chives.
 
my girlfriend is being difficult with the recipe she doesn't want to give it to me. so she is only able to make it for me. ill try and get it out of her. it is alot different from the one above.

Difficult! No, not West African women!.....I agree that this soup is amazing. My wife is from Lagos, and she can be very difficult at times! I wish I had her genetics though! she's ripped all year round and never even works out! Their food is very high in protein, and with all of the chili they use I'd bet raises your metabolism too.
 
Well that's fukin great LOL... Give us the damn recipe dammit. You get us all drool mouthed then say fuk you! Who wears the damn pants in that relationship anyway? Grow some balls and get the recipe dammit! :p

very similar to mine but i add cumin, coriander and i use fresh ground peanuts and ad them to the vegetables at the start
