I just rushed through all of the posted info, and I think I agree with pretty much everything that was posted! I too was having "issues" with not much thickness in my traps.
I do this one thing now that REALLY works!!!!! (just try it before you doubt it)
lay FACE DOWN on an incline bench, with a heavy dumbbell in each hand and with FOCUS, and CONCENTRATION, squeeze your shoulders onto your back, pulling your shoulderblades together, and SQEEEEEEZING then return to the down position, and repeat til it's impossible to do another! TRUST me this hits the "meat" in the back of the traps, and you'll notice a difference pretty quick!! I'm NOT saying to do these instead of shrugs or deads, but add them to your back training......you'll LOVE EM !!!!!!
