Most fish are an excellent source of protein, vitamins and low fat - its all how you cook it that matters. Use olive oil to pan fry it or back it in the oven. Fresh herbs (or dry), some fresh garlic, salt/pepper and that's all you need. Add a bit of butter if you want more flavour, but really that's all you need. If your fish smells fishy then it's old - get as fresh as you can and you won't smell it.
a lower fat alternative is to steam it, I love Pacific salmon (any kind). I love to put lemongrass/ginger, lime leaves, garlic, and chilis in the steaming liquid. hit it with some soy, green onions and lime juice!
