I dont care for vegetables whatsoever, so what i do is chop up green peppers,red peppers, yellow peppers, green squash, yellow squash.. Stick with me i know it sounds gross... throw some vegetable oil in a pan on medium and weather it be chicken, steak, or just by itself. Then you have a stir fry. I usually cook enough for a couple of days. If you want some flavor use low sodium soy sauce or you could get away with using some kind of dressing. Trust me.. you dont taste that nasty squash taste.. The peppers overpower it and the soy sauce helps as well.
