I can't help but wonder if people would be offended if the school served corned beef and cabbage on St. Patrick's day? What about spaghetti and meatballs on Christopher Columbus day?

Puts me to mind of an email received a while back:

The following is the winning entry in an annual contest at Texas A&M University calling for the most appropriate definition of a contemporary term. This year's term was Political Correctness. The winner wrote:
