Recipe Ideas for Mahi Mahi Fillets

me wasnim and all them eating mahi mahi back in the day..

members should know mahi mahi is not the dolphin you probably have pictured in your mind, since that dolphin is a mammal not a fish...
 
This will work for any of your "white" fish. If you are concerned with a fishy taste, you can soak your fish in milk for 24 hours and it will remove the fishyness from it (Change milk at least twicein 24 hours). Here is a good recipe:

Ingreedients:
2 Mahi Mahi filets
1 Avacado
Cilantro
1-2 limes
2 roma tomatos
4oz tequila
salt
pepper
Olive oil

Directions:
for salsa chop avacado, tomato and cilantro corsely, combine and toss with lime juice, salt and pepper to taste then sit in fridge
preheat oven to 350
heat 3 tablespoons olive oil in oven safe pan until the oil is almost smoking
pat mahi filets dry
coat both sides with olive oil
place filets in pan sear filets on each side until carmelized, about 1-2 minutes
once sides are carmelized place pan in oven for 4 minutes
remove from oven, plate fish, deglaze pan with tequila, a teaspoon of butter or olive oil, and a squeeze of lime juice
top with salsa and serve

Macadamia Nut Crusted Mahi Mahi Recipe

5 ounces (about 1 1/4 cups) coarsely ground, roasted macadamia nuts
1/2 cup panko (Japanese-style bread crumbs)
2 tablespoons all-purpose flour
1/4 cup butter, melted
Vegetable oil, for brushing foil
4 (6 to 8-ounce) mahi mahi fillets
Kosher salt and pepper
2 tablespoons coconut milk

Preheat oven to 425 degrees F. In a medium bowl, stir together the nuts, panko, flour, and butter. Set aside.
Place a piece of aluminum foil on a baking sheet and brush it liberally with vegetable oil. Place the mahi mahi on the foil and sprinkle each fillet with salt and pepper on both sides. Bake for 5 minutes. Remove from the oven and brush each fillet with the coconut milk. Divide the nut mixture among the tops of the 4 fillets, patting the mixture to spread and adhere to the fillets. Return to the oven and bake for 5 to 10 minutes, or until the crust is golden brown.

Remove from the oven and allow to stand 10 minutes before serving.
