Pudding?

I've seen the sugar free pudding...it has 40 cals per serving (not including milk) with i believe 4 servings per box. I work in a health food store and I've noticed that the soy milk has just as much sugar, if not more than regular milk but you can use it to make pudding. You have to use good soy millk like the silk milk or eden soy becase the cheap stuff will curdle up when you heat it. I've personally never tried the pudding cuz I'm afraid i'll eat it all at once if I buy it and that wouldn't be good for the diet. I'd love to have it, but i'll jsut stick with the jello for now. Anyone ever tried making it with water? Probably wouldn't work but that would be pretty cool if it did.

soy milk does have sugars, but not lactose specifically... I'm not intolerant, but have problems getting really lean with lactose in my diet, plus i find it to be an energy drainer (if i drink a big glass of milk i want to sleep 20 min later... another negative effect of lactose... when i'm not cutting i drink milk like its going out of style though :) )
