pectin works, as does Agar-agar, both are non-nutrient dense cellulose thickeners, no perceptable added nutritional value.

Works fine with 1 Tablespoon of unflavored gelatin added to the fruit and splenda mixture for however much you're making. (6 cups diced strawberries, peaches.....)
