Well now I can understand how come you are "bulking" with your calorie intake, nd although it's low it makes sense if you were barely eating 1000 cals before (I don't know how you did that lol). Although this wasn't healthy!!!
Sounds like a good plan to stick to around the same cal intake but just add the cardio. I hope you enjoy your rest time, it's obvious that you need it, and nothing wrong with that.
I can only imagine how difficult it is to follow "a plan" whether it be cutting or bulking given your current situation.
