I know the cans.......and all i can offer is this:

Yam is the common name for some species in the genus Dioscorea (family Dioscoreaceae). These are perennial herbaceous vines cultivated for the consumption of their starchy tubers in Africa, Asia, Latin America and Oceania. There are hundreds of cultivars among the cultivated species.
The sweet potato (Ipomoea batatas) has traditionally been referred to as a "yam" in parts of the southern United States and Canada even though it is not part of the Dioscoreaceae family.

Ones Yellowish, Ones orangeish..
When you order Yam Tempura at a japanese restaurant, sometimes you get yam, sometimes sweet potato.. lol.
That's all I really know about them.

I have noticed people use the names interchangeably though. weird.

ok its not just me!

Botanically, the yam is a sweet potato. But the name is applied only to a scientifically developed sweet potato which can be grown to perfection only in certain soil-rich areas. The variety is distinguished physically by its coppery skin, deep orange flesh and when cooked, its smooth and syrupy texture.
