Help needed on workout routine. Back at it

I'm 23. 5'11 and around 220lbs. I've lifted weights since I was around 15. Played college football and all that good stuff (running back/slot receiver). Started workin in the oil field putting in a lot of hours and got lazy. Now I'm sick of being out of shape. My go to routine for most of my life was

Monday: chest/tri
Tuesday: back/bi
Wednesday: off
Thursday: legs/calves
Friday: shoulders/traps

I had good results with this routine. Best i looked was 195lbs around 9%bf.

I'm trying to lose fat and maintain what muscle I have.

I've read about the mad cow 5x5 but I feel like 3 days a week in the gym is useless. I'll take criticism for that. I've been a fan of volume but now I see that most people get better results with less volume. I'm not trying to look like Phil Heath. Just want to look good naked if you know what I mean.

What would y'all suggest a good workout routine would be? Time in the gym is not a problem so any split will work for me?
