hard boiled eggs - how the hell do you peel 'em?

If you cook eggs for too long the shells stick to the eggs really bad. Only boil them for about 10-12 minutes. Then immediately dunk them in really cold water and peel them under water
 
man there is some funny shit in this thread. "18-20"??? OMFG!!!
I boil a dozen every morning for me and my two daughters (age 2 & 4).
I fill the pot add the eggs in the warm water turn the stove on high and take them out 15 mins later. this equals the same as 8-9 mins in "boiling" water.

I use to put them in boiling water for 9 mins but found this new method of not having to put them from the fridge into boiling water.

Then I rinse them a few times to cool them off, then leave them in cold water for 3 min and start peeling. we toss the yolks in the trash and enjoy the egg whites with toast or oatmeal.

OK, poke a tiny hole in the egg to release built up nitrogen. Use your favorite water shocking method (see above), get a spoon, get some of the shell pulled off or started, slide the spoon under the shell and gently ply up, the shells come off very quickly and in large pieces, so you don't have to worry about small bits of eggshell. Be sure to get the spoon under the membrane in the egg. Happy eating! :Chef:
