hard boiled eggs - how the hell do you peel 'em?

I cannot for the life of me remember how I used to make 'em way back when.

I'd hard boil them, and when I went to peel them, the shell came off easily instead of now, when it crumbles and tears the egg apart.

c'mon, somoene has to know what I'm talking about...help a brother out, please!
 
I know exactly what you mean, but you're in luck i have the answer. Fill up a pot or a decent sized bowl with water. Submerse the egg in the water and peel the egg under the water. Seriously it much easier!!

I think the water must get in between the egg and its shell or lubricates the shell making it break up the egg less or both i'm not sure but does work for me.

crack it slightly, roll it on the counter, and try to get your thumb under the top of the shell...i hate peeling boiled eggs.
 
I swear to tell the truth, the whole truth, and nothing but the truth.....................................Boil your eggs for the shortest ammount of time possible, while still allowing it to fully cook (between 10-20 mins). Once boiled, immediately strain and put them in COLD water (ice-water-and a pot). Let them sit till fully cool, and PRESTO! you have easily peeled eggs.

Add some salt to the pot while the eggs are just starting to heat up good. It makes it much easier and more able to peel them off without getting it all messed up.
 
Food service food suppliers sell peeled hard cooked eggs. The cost isn't that high either. If there is one near you check them out!
 
you are over boiling them. put the eggs in boiling water, set the timer from 20 mins from the time the water starts to boil again. once complete, run under cold water for a good amount of time to cool the egg..
 
fool proof eggs-
water and eggs in a pot,bring to a boil-boil for 1 min. turn the fire off,cover pot and let the eggs sit for 18min.
rinse with cold water and peel while warm, never fails for me, and the eggs will be perfectly cooked.
 
Super fresh eggs are usually really hard to peel, too. If you can let them hang out in the fridge for a few days before boiling, in addition to some of the other tricks (bring to a boil, turning off the flame and let them sit really gives the most consistent results), you might have less headache.

i don't have to worry about super fresh eggs at my grocery!!lol
 
o my fucking god.you are all wrong.not intarly wrong but wrong.
what you need to do is called shock the eggs.if the eggs are hote run them under relly cold watter and the shell will come off esaly.if they are cold run then under hot watter.
under the shell ther is a thin lair of skin.this lair of skin will shrink if you shock it.thos making it essy to peel the egg.

Okay, we all have our own ways of doing it that works, here's MINE:

Place eggs in pot, fill with water to at least 1/2" above eggs.

Put pot on fire, bring to full rolling boil.

When full rolling boil is achieved, slap top on pot, turn flame off. Set kitchen time to 10 minutes. Go do something else.

Have ANOTHER bowl of water in the sink half filled with ice and water.

When timer goes off transfer eggs out of hot water into ice water.

I happen to like my yolks a pinch underdone and dislike green rings.

Wait until thoroughly chilled before trying to peel, when peeling utilize the crack and roll-roll-roll technique, then begin removing the shell from the fat end, where the air pocket is.

When all else fails, get a spoon and scoop it out of the shell, for heaven's sake, it's ONLY an egg! Get's mashed when you eat it anyway! :chomp:

I agree absolutely (also from experience) - the emersing under cold water until the egg is cold is what works for me...
 
Yeah I swear by the cold water method. It really works.

Also, the longer my eggs sit in the fridge, the easier the shell comes off. If I boil a dozen, the last 3 or so are really easy to peel.

wow you have just expland how to shock an egg.
 
Had to bump this up for a question. I want to make a few dozen hard boiled eggs. I have no problem doing this but I am confused on how to store them after. Like I will be eating them over the next 5-7 days or so.

Should I peel all of them immediately after cooking then put them in a storage container in the fridge?

Or should I just let them cool down after cooking then leave the shells intact and THEN peel them when I am ready to eat?

Can they just be put in an airtight container (tupperware) or do I put them in a bowl with water?

Sorry Im confused on the storage part of this, dont want them to go bad after cooking. Thanks!!

Here's what I did: Cooked them & peeled when still warm then sliced in half & took out the yolks......then put all the whites in a plastic baggie & kept them in the frigde.....Stayed edible (ie fresh) for 9 days.....

If you cook eggs for too long the shells stick to the eggs really bad. Only boil them for about 10-12 minutes. Then immediately dunk them in really cold water and peel them under water
 
man there is some funny shit in this thread. "18-20"??? OMFG!!!
I boil a dozen every morning for me and my two daughters (age 2 & 4).
I fill the pot add the eggs in the warm water turn the stove on high and take them out 15 mins later. this equals the same as 8-9 mins in "boiling" water.

I use to put them in boiling water for 9 mins but found this new method of not having to put them from the fridge into boiling water.

Then I rinse them a few times to cool them off, then leave them in cold water for 3 min and start peeling. we toss the yolks in the trash and enjoy the egg whites with toast or oatmeal.


but 20 MINS???? holy shit that's nasty :)
 
OK, poke a tiny hole in the egg to release built up nitrogen. Use your favorite water shocking method (see above), get a spoon, get some of the shell pulled off or started, slide the spoon under the shell and gently ply up, the shells come off very quickly and in large pieces, so you don't have to worry about small bits of eggshell. Be sure to get the spoon under the membrane in the egg. Happy eating! :Chef:
