Instead of grilling meat just before I am about to eat it, I often grill large amounts of steaks and chicken breasts, freeze them and reheat one when I am about to eat.
Is this okay, or will it destroy the protein structure?
What about if I were to cook it, freeze it, reheat it a week later then eat half and leave the other half in the fridge. Would it still be alright if I reheated this half again the next day?

Yeah, it will. It may be more dry than uncooked meat & it won't last 1 year or anything like that. I'd freeze cooked meat -- namely to retain taste & texture -- for no more than 2-3 months.
What about re-freezing meat (i.e. cooking it, freezing, reheating, freezing, reheating, eating)? I hear it can cause a build up of bacteria... is this true?

Bacteria is always in motion.....freezing simply makes it "sleepy" so it forms more slowly. Heating meat to it's proper temperature is what kills the bacteria enough for you not to be sick. Plus, due to your age & health, your immune system will take care of the rest of any remaining bacteria.
You can: Freeze raw meat, thaw it, cook it, freeze it again, thaw it, then eat it.
You CANNOT: freeze raw meat, thaw it, refreeze it, etc etc nor can you freeze raw meat, thaw it, cook it, freeze it, thaw it, freeze it, etc...
