I personally have anywhere from 1-6 tablespoons of virgin coconut oil a day. Love the stuff. I throw it in the freezer and cut it into blocks.
Doesn't coconut oil increase insulin? Read on some sites people complaining how they gained weight from coconut oil, especially around the midsection. That is a sign of high insulin, which from what I've read, coconut oil increases.
