Myway, you don't have to change things overnight, in fact I recommend to do it gradually or your body will reject it. I was a coffee addict, lol! the way I did it was to cut down gradually and in 1 or 2 weeks you're having green tea. The last couple of days of your cutting down should be with decafeinated coffee, if you don't do this you'll get a number of unbearable symptoms.
When you buy organic, try to get LOCAL organic and if they don't have it, that's fine. You go with the process of elimination.
Cut cheese down gradually as well. It doesn't have to be overnight; just know you have a goal of being healthy for the rest of your life. This way you'll have a lesser change of getting sick because your body will be a fine tuned machine.

I have NO PROBLEM doing this gradually... especially with cheese. That gonna be hard. I have done fine with the coffee (lol, its only been a few hours) I had a hot cup of water with a couple of lemon slices. It's actually really good. Since it was hot, I kinda felt like I was having coffee. For breakfast, I had oats mixed with almonds. I'm REALLY going to try for more water. That's a BIG issue for me.
I'm on my way out the door to hit the grocery store. I need to pick up some new food.
