Try an Indian county or an Indian reserve. I get my moose and caribou there. Very high in protein and low in fat. For 250g of moose 1.5-2g of fats. You might need a license to cover those meats.

just move to PA. you can pretty get anything you want. I live on a farm and plenty of groundhog and fox meat. And I am really not joking. It tastes pretty good. Skinnig is a pain in the ass though. dont forget all the turkey, deer etc.

I have eaten a lot of moose elk deer and bison meat while cutting up! Try a search for exotic farms in your state, I used to get everything from my dad he is a huge hunter and one moose provides quite a bit of hamburger haha!
The bison I bought from a rancher and he processed it himself. Killer taste and hardly any fat at all!!!
