4- 4 oz. boneless, skinless chicken breasts, sliced thin.
1/2 C. plain bread crumbs
1 1/2 T. Chopped fresh thyme
1/2 t. paprika
1/2 t. freshly ground black pepper
2 1/2 oz. smoked mozzarella(you can use reg. moz. too)
1 small bunch fresh basil- approx. 30 leaves
1)Preheat oven to 375 degrees
2)Wash the chicken breasts and pat dry. POUND them lighly with a wooden mallot until each one is 1/4 inch thick.
3)Combine the bread crumbs, thyme,paprika, and pepper in a cup, and pour onto piece of foil.
4)One by one, dip each piece of chicken into the bread crumb mixture, coating both sides.
5)Put on fourth of the smoked mozzarella and the basil leaves in the center of each piece of chicken then roll them up, and lay them on a bake-and-serve dish, seam side down. BAKE for 20 minutes- uncovered.
Yield( Serves 4)
Each serving: 210 cals., 31 gram protein, 6.3 gram fat, 5.8 gram carbs.
