Carbohydrate concern

When doing a carbohydrate load a few days prior to contest. What kind of carbohydrates do I need to start with and what kind of carbohydrates do I need to end with. I have heard of bodybuilders starting there carb loads with simple sugars like donuts and ending up with starchy carbs, or do I need to stick with starchy carbs only. If you did start with a simple sugar when would you go to starchy carbs
 
I'd have one meal with simple carbs and the rest of the day I'd go with starchy carbs. I'm not a professional on this so you might wanna ask someone else, but that seems like a good idea to me. The reason I'm saying to only have one meal of simple carbs is that your insulin will spike if you take in to many of them, and a couple days prior to contest, that's the last thing you want to happen.

If you are two days out, ex: show on sat. and you carb up on thur....then on thur you have all LOW-GI carbs...
Low-GI carbs: oatmeal, brown-rice, yams, beans, sweet-potato , pasta
then on Fri for the first 10 hours have the same low-gi carbs, and starting hour 11 use higher-gi carbs, and sat. morning have VERY HIGH-GI meal, following by constant every 2 hours sugary HIGH-GI MEAL right up until the morning show. (pre-judging)
